 Stemed Brown Sugar Sponge Cake

Ingrediets:

  1. Eggs 4
  2. Dark brown sugar 100 g
  3. Milk 1/2 cup
  4. Vegetable oil 1/4 cup
  5. Flour 225 g
  6. Cornflour 25 g
  7. Baking powder 1 tbsp
  8. Water 6 cups

Method:

  1. Crush the dark brown sugar.
  2. Beat the eggs and dark brown sugar until thick.
  3. Gently fold in the milk.
  4. Mix in the vegetable oil.
  5. Sieve flour, cornflour and baking powder together.
  6. Gently fold in the egg and dark brown sugar mixture, mix well.
  7. Bring half a wok of water to boil.
  8. Place the steaming basket with 8 lined cups inside.
  9. Pour the batter into the cups.
  10. Steam over hight heat for 20 minutes. Serve

Tips:

Refill the wok with hot water while steaming as to keep the temperature hot enough to produce fluffy cakes.
